It is 3h17 in the morning and this is the time we start to work in france when we really bake and not just warming up frozen pastries from a brand like Banette which is killing our profession.

Hello! My 14 year old daughter wants to become a pastry chef one day. What is the best path to get her there? Should she study abroad (France) for a year or two, or are there others paths that would benefit her?

The goal for her is to own small bakery. Thank you for any guidance.

Yes i use a wood oven it is very old and it can not be moved since it is a part of the bakery which is an ancient house in my city
