It’s not complicated at all. Actually very basic. If you can use fresh garden tomatoes then even better. Great on pizza and kids love it with spaghetti. Heat in a sauce pan with a couple table spoons of excellent organic olive oil until soft. Add a couple cloves of fresh garlic (minced). Add one large can of whole crushed tomatoes. Crush each tomato further with your hand. It is my personal belief that when you create food with your hands it tastes better because of the kinetic energy you put into it. So scrub your hands like a surgeon and massage the food. Add 2 tablespoons of basalmic vinegar, 2 Table spoons of sugar, half a small can of tomato paste, 2 tbsn of garlic and oregano. A dash of red pepper flakes. Add a little water and simmer for 25 mins. Tap water will ruin the recipe because of the high chlorine count. Feel free to add ingredients to your family’s preferences. But this recipe has made me a lot of money in the industry and wins over most people the way it is. Just a great go-to sauce. Enjoy! Side note: happy people make wonderful food. There is a reason my grandmother never used onions in 'sauce' of this nature. Iv made this just by making it. Italian food like this were the first to understand ( obviously theres a billion dishes from ingredients that makes you not know anything ) However. With certain pasta gripping sauce ( needed for some dishes ) but also seeing tomato pasta thats even more basic than making a sauce. The reason likely for not making a sauce. Is because it would be too much sauce for the pasta. It would also be less variable flavour. So you would just sweat fresh tomatoes. Garlic and basil. Maybe chilli and maybe stock. This then decides that you will use fresh pasta. Where as some dishes might be better with dried pasta. They must use dried pasta in Italy? You then have a variable taste of fresh pasta. Nicer tomatoes and olive oil. Parmesan. Never made a pizza. Would obviously see about making a better infused sauce but cant why you couldnt just use passata or paste. With nicer other ingredients of mozzerella and meats. No need for a block of melted cheddar. Although a good pizza with melted cheddar would still be ok ( or confirm even more why melted cheddar isnt nice ) I actually thought pizza hut were ok. |
