They are all pretty much the same, all have the same menu but there are some differences. Containers, how the sweet and sour sauce is served, egg rolls and the actual food and price.

I think I found the perfect determinations. I was letting my kids be the judges with the egg rolls. BUT if they don't serve Pad Thai, forget about it.

next is the container. Must be a leech free plastic that is dishwasher and microwave safe, check. can totally reuse this shit for something hot.

now the egg rolls. the vegetables inside must be fresh and have some texture and not just mush.

Today I had the perfect Chinese take out, was full before even a 1/4 of the meal was finished and could only eat half an egg roll.

and the most surprising thing about this place was the sweet and sour came in packets and it was one of the cheaper places I've been taste testing.

So far all the little places I go to have visible kitchens. These are strip mall locations and not big restaurants. Have to see the sweaty young men in the back.

what kind of taste? lighter more greasy?

I found a place that had options for just steamed veggies and rice but Pad Thai beats them all hands down.

I've never had lo mein, but looking it up the noodles look fatter. Also not the white rice noodles. They're just skinny chow mein noodles and a tiny bit firmer than regular chow mein. Let me see if I can find what I mean

One indicator for me is noise.......proper stir fry requires very high heat and fast stirring......the high heat is responsible for "wok he" ( breath of the wok).....it imparts a smokey/carmelized scent to the dish.....low noise mean lower heat is used and not much stirring resulting in a greasier dish with limp veggies......

If you hear a ding of the microwave..... run......lol.....

Imho, it has to have peas, carrots and onions. And oyster sauce.

And.. I prefer old chinese men to make it. The chef at my favorite spot is 80 years old. Old school is the way to go.
