The woman behind a now-viral video “exposing” how Panera Bread prepares its mac and cheese says she was fired from the company.

The video, originally posted last week on the social media app TikTok with the caption “exposing Panera,” shows an employee drop a plastic packet of frozen mac and cheese into a boiler, cut the bag open and then pour its contents into a bowl.

Here is the video:

Re: Panera Bread employee who posted TikTok video 'exposing' how mac and cheese is prepared was fired!
What is sous vide cooking?

Once limited to the pros, sous vide (pronounced sue-veed) is a cooking technique that utilizes precise temperature control to deliver consistent, restaurant-quality results. High-end restaurants have been using sous vide cooking for years to cook food to the exact level of doneness desired, every time. The technique recently became popular for home cooks with the availability of affordable and easy-to-use sous vide precision cooking equipment.

Sous vide, which means “under vacuum” in French, refers to the process of vacuum-sealing food in a bag, then cooking it to a very precise temperature in a water bath. This technique produces results that are impossible to achieve through any other cooking method.

If the public finding out how a product is prepared is an embarrassment and a secret, then the company needs to change it. At least to some method they aren't ashamed of to the point they would fire someone being shown preparing it.

Why would anyone be surprised that there are not chefs working at a fast food joint? They can hire reces monkeys to do these jobs but it is a shock revelation that the food is already prepped?

Most fast food is already cooked. They just heat it up and serve it.

Most places just microwave precooked stuff in a plastic bag. This method is safer and provides better results.

If an employee decides she needs to film her activities on her job without her employers permission, that employee needs to be fired.

BTW..did you ever make mac and cheese from scratch?

Probably not.

One of the steps is heating the milk and cheese.

Another step is boiling pasta in water.

Then combining.

Did Panera claim it was made from scratch in the store? I don't know, never eaten there. 90% of the time, anything sold in a restaurant as "homemade" is certainly not, it's heated up from frozen. This allows restaurants to serve a larger menu of food that won't spoil right away.

If they did make it in the store, people would bitch about it being dried out and clumpy. Guaran-fucking-teed. Almost every restaurant where you pay less than $50 for a meal just buys the same crap from Sysco or some other wholesaler as every other restaurant.

Most people can't spare the bandwidth to consider what happens to the food in the kitchen. They think they can order whatever they want, whenever they want, and it should be made from scratch. Unfortunately, unless you want to wait 4 hour, that ain't happening.

I worked for a restaurant and food wholesaler for 5 years, it'd be a great job if the general public had any realistic idea how food gets actually made.

If you went in the kitchen of most restaurants, you would NOT want to eat there. We went through a lot of employees because of laziness and just not giving a fuck. When I pay you a good wage, I expect you will keep things clean and sanitary. Although I've certainly wanted to, I would never actually fuck with someone's meal, and have fired people on the spot if I catch them doing it.

Chain restaurants suck, period. And people act all surprised when they actually have to face that fact.

Perhaps you prefer buying a cold sandwich at Starbucks, that they heat in a combi oven before serving it to you.

As for me, as long as Panera keeps serving a toasted everything bagel with cream cheese. I will keep going there.

Determining best practices by public opinion is the cancer we call democracy.

People are too uneducated, reactionary, and brainwashed to make reasonable judgments on the finer points of food preparation.

But they will anyway, and that can affect a company's bottom line.

Food at restaurants is usually crap.

As an example, look at this "3-D Chicken Fillet"

The only only ingredient should be chicken.

Nope:

INGREDIENTS: Chicken Breast with Rib Meat, Water, Seasoning [Brown Sugar, Corn Syrup Solids, Salt, Dextrose, Sugar, Vinegar Powder (Maltodextrin, Modified Corn Starch, Vinegar Solids), Garlic Powder, Hydrolyzed Corn Protein, Onion Powder], Salt, Dextrose, Sodium Phosphate.

Check out the nasty food they sell:

Apparently the larger complaint is that they charge 8 dollars for a serving of mac & cheese.

We make our mornay from scratch. Then combine it with barilla cavatappi pasta we boiled previosly. Then top with parmasean and throw in oven. We cook the pasta and Monday ahead of time during prep period and then heat Monday and pasta and combine for each order. No preservatives. Food only lasts 5 to 7 days with no preservatives. Panera cheese sauce is loaded with preservatives and emulsifiers to ensure wheb you order it, its the same every time, doesnt separate and doesnt have to be thrown own and started again every few days

I think Panera was embarrassed by this because they try to present themselves as always making fresh "clean" (I HATE that expression) food and the vacuum packed mac'n'cheese probably goes against that image.
