Trichinosis is really really rare here in the US. Most of the cases come from wild game. With pork for example, its safe to eat if its been cooked over 145 degrees (medium), or frozen for 3 weeks. Wild game on the other hand because of different species of worms should be cooked well done, and freezing doesn't always work. Generally though if it's farm raised here in the US you should be ok.
