My grandma did this; Take the amount you need ,pour water to cover them. Next day,all the floating ones ,are bad. With the night soaking they will be tender to cook faster.

How do you have them stored? In an airtight container? They say a year or two but I know I've succesfully cooked dried beans I've had longer than that.

How are they stored is the problem....beans will go rancid after some time on normal shelf storage. I only have about 40 pounds bought back in October...I am wondering too...I have a couple of freezers for storage if need be.

Be sure you soak them over night before you cook them. I made red beans and rice (didn't soak them) and the texture was horrid.

Re: Question about dried beans
Dried beans last a long, long time. Have you ever had anasazi beans? Scientists studying the cliff ruins of the Anasazi people in New Mexico/Arizona came across a stash of an unknown type of bean in one of the old storage rooms. They decided to see if any would grow...centurys old beans germinated and grew, and now farmers have a new (and very tasty) bean to add to their field crops.

Re: Question about dried beans
funny part of this is my wife who is in the other room knows nothing about the bunker and all the work I have done in the back of the land.

I got 2 guys from the church close by that I pay to help me.

They are local and don't really understand why I am doing it and just go along with what it all.

getting the well in was a core

we had to go down about 350 feet!!!

I live about 4 hours away and love going up there!!!

If they/we bother you so much, why do you read the post and more than that why respond?

I know why...you are interested in this peaceful life but too dumb to try it. So you just throw sticks at something you do not understand. You likely have a hidden life you wish you could be free of.
