These restaurants are owned by Chinese people all over the US and the basic MO is the same. You have a front counter person who is either a younger woman sometimes with a child or an elderly man and in the back the kitchen is staffed by 6 to 10 military aged men in excellent physical condition who all look like they do not want to be there. No smiles...no chatter...just focused work. You may have seen them before. The restaurants who do this (and there are many dedicated to just this) can be spotted by the total rotation of the cooking "crews". You will go in and notice that all of the cooks are different but still all military aged men in great shape who appear to not want to be there. The front counter people are always the same as they do not rotate. Rotations happen at different times at different restaurants, but each crew rotation is around 8 to 12 weeks. So, when it does go "hot" in the US...all across the country Chinese Special Forces teams will already be in place. Good! Can't wait until they show up at our doorsteps.
