Use the drippings to make a pan gravy or save. Day two - hearty leftovers Day three - boil remaining chicken and carcass with half the remaining carrots, onions, garlic, celery (including the leaves) then simmer for a full day. Strain, removing any pieces of meat separate from the rest. Now you have an AMAZING, flavorful, rich chicken stock. Add remaining veg and separated chicken to the stock for the best homemade chicken soup ever. This could feed a family of four, dinners for at least five days, or the stock/soup could be frozen for later. Pair with homemade bread to fill up, or add noodles or rice to the soup.
