Moses wrote the rest of the Torah to record what happened.

God had his angels dictate the Torah and a few other books to the scribes that Ezra had.

For me, it's was God's emphasis on writing down what He had said.

People even memorized entire chapters of the Tahank from back in ancient times to even today.

If you use Paul to refute OP's false doctrines, he will simply ignore what Paul has to say.

It's not Paul you should worry about:

1 In the beginning was the Word, and the Word was with God, and the Word was God.
2 The same was in the beginning with God.
3 All things were made by him; and without him was not any thing made that was made.
4 In him was life; and the life was the light of men.
5 And the light shines in darkness; and the darkness comprehended it not.
6 There was a man sent from God, whose name was John.
7 The same came for a witness, to bear witness of the Light, that all men through him might believe.
8 He was not that Light, but was sent to bear witness of that Light.
9 That was the true Light, which lights every man that comes into the world.
10 He was in the world, and the world was made by him, and the world knew him not.

I don't 'worry' about anything.

There's a growing school of textual critics that entertain the idea that John didn't actually write the beginning of his gospel.

For me the most glaring thing is that John NEVER says the phrase 'Jesus is God'. Why is that?

Where does Paul write...

..."thus saith the LORD"?

He doesn't. Father God didn't speak to him like Moses - Isaiah etc...

Not one single time.
