Mom's Killer Bread
I do several things from home to help bring in an income, including baking.

One of my most popular recipes is a bread that is both light, has good texture, but is also LOADED with nuts, seeds and whole grains.

My family and friends call it, "Mom's Killer Bread."

It is great for sandwiches, or with beer and cheese and olives, and as a healthy high-fiber, low-carb alternative.

Combine:
1/2 cup chopped Pumpkin Seeds
1/2 cup slivered Almonds
1/2 cup chopped Walnuts
1/2 cup Sunflower Seeds
1/2 cup Sesame Seeds
1/2 cup Flax Seeds
1 cup coarse Corn meal
1 cup whole rolled Oats

Divide and save 2 cups dry for topping. Set topping aside.

Add to the remaining: 1 1/2 cup Rye flour

Pour 2 1/2 cups of hot water over mixture that includes Rye flour and stir. When temperature is reduced to warm...

Add 1/4 cup sourdough starter. Cover and let sit for an hour until room temperature. (This is optional but does improve texture.)

In mixer let sit until foamy:
2 1/2 cups warm water
3 Tablespoons Yeast
1/4 cup Molasses.

Add and mix in order:

4 Eggs
1 cup sour cream
4 cups whole wheat flour
5 cups King Arthur White flour
Wet Nut and Seed mixture
2 Tablespoons Salt
1/2 cup Coconut oil (sub: sunflower oil or butter)

Let it knead in a dough mixer (I use a Bosch) until dough is elastic and stretchy, and does not easily tear when tested. The most likely mistake you will make is not letting the dough knead long enough. It takes my dough 25 - 30 minutes to reach "the stretchy stage."

Proof in oiled, covered bowl at 68 - 78 degrees until double in size (about 20 minutes at 7K’ altitude, longer at lower elevations).

Divide into 6 pieces. Fold and turn to make 6 uniform balls. Put into smaller bowls lined with baking/parchment paper.

Brush the tops of each loaf with egg and water mixture: (1 egg + 1/3 cup water, beaten). Sprinkle and pat the dry nut and seed topping onto of each loaf until heavily crusted. Let rest and rise.

Preheat oven to 500 degrees with 4 quart Dutch Oven on one side and a flat skillet on the other side.

When loaves have doubled again and oven is 500F degrees, place one at a time, lifting the corners of the parchment paper, and placing it, as well as the loaf, down into in the (now very HOT) dutch oven for about 15 minutes and cover with the lid.

Then remove each one (paper and all) 15 minutes later to the flat skillet for a further 5 - 10 minutes until the crust is browned. Remove from oven and cool.


You can also oil and flour bread loaf pans and let the dough rise in the pan, then bake them (without a dutch oven.) The dutch oven just results in a loaf that is more moist inside, while developing a nice crackle-crust.

This makes 6 loaves - which is a lot, but it goes so fast, I kept increasing the recipe to have enough to last 2 days.

Yay - I hope you like it! Depending on how large your eggs are and how liquid your oil. . . you might need up to 1/2 cup more flour. I use medium size farm eggs and coconut oil for mine, so it's a steady 5 cups King Arthur flour for me.

Yes, and I go for organic, non-gmo ingredients as much as possible. So it's expensive to make. However, when you don't have any medical/health bills - it makes sense. :-)

The cheddar and jalepeno sourdough is a best seller too - especially with men.

Sourdough is tricky though, the recipe has to be a little different for every altitude and starter. I can't confidently share that recipe and know it will turn out okay for someone else.

Hi there,
I would recommend finding a sourdough recipe for your altitude. (I am at 7K') Then, simply fold in blue cheese crumbles and sliced green and black olives in the amount you would enjoy.

No to the Farmer's Market. I've thought about it, but even the Farmer's Market has become too red-taped for me. I deliver special orders only and drop off "menus" of my wares at various locations.

If you decide to go into the business, I recommend locations where men go to work early: auto shops, welding, construction sites, dry cleaners, laundromats.

Yes, that is why my family calls it "Mom's Killer Bread" - because they think it's better than Dave's. Although I bet his would be pretty amazing fresh and without the preservatives necessary to keep it on the shelf a while.
