I do a brined turkey every year. Alton Brown did an episode on Good Eats where he introduced this idea, so my friend and I gave it a try. Turned out to be one of the best tasting turkeys I've had. Of course there are lots of ways to prepare a turkey but I don't think I could ever not brine one as the flavors and added moisture makes an amazing bird every time.

Here's the recipe and you can't go wrong following it step by step if you haven't had it before.

Another recipe that I do during the summer is a brined turkey then smoked with pecan wood. Smoked brined turkey is outstanding, but it's more of a nice summer BBQ style and I wouldn't replace my thanksgiving or Christmas turkey for it.

Malcom Reed has all the bases covered in this video for one of the best smoked turkey recipes I've tried.

Dang, our turkey was the best we ever cooked. Did a 14 hour brine and well, it was absolutely wonderful smoked 9 hours.

Make a marinade out of olive oil, fresh rosemary and basil, minced garlic, italian seasoning, salt and pepper. Make a pocket between the breast skin and meat on either side and for each leg. Put the marinade under the skin and on the outside of the turkey. Use toothpicks to put the skin in place. No need to brine or baste. Roast at 325 degrees for 3-4 hours. Comes out tender, moist and flavorful. I’ve used this recipe for years and it never failed.

Warm up some butter till its soft.
Take the following herbs and blend them into the butter.
White sage
Thyme
Garlic
Rosemary
Marjoram
Salt (a pinch)
Pepper

Seperate the skin from the meat and stuff the in between with the butter mix where ever you can stick it.

Let it marinade over night.

Put the bird (20 lbs)in the oven at 325 for about 4 hours and each hour baste the bird with a salt pepper honey and parsley mix.

After 4 hours you will have a moist succulent bird that is just YUM.
How can I be substantial if I do not cast a shadow? I must have a dark side also If I am to be whole.
