(It's also National Gumbo Day too but I like pulled pork more.) I only make this dish a few times a year because it's not the healthiest food you could eat but it tastes really good. It's easy to make because all of the ingredients are ready to go. In a small casserole dish or Pyrex, layer a tub of mashed potatoes on the bottom. (I like the garlic or loaded potato kinds.) Next dump a small can of corn on top after you've drained the water out. Add some salt and pepper. Dump a tub of pulled pork on top and spread it around. This is when I add some hot sauce and a little extra barbecue sauce. Finish by sprinkling on some shredded cheese and bake. Everything is already pre-cooked and ready to eat so you just need to get it hot enough to melt the cheese and not be cold in the center. https://imgur.com/1xGb56F https://imgur.com/RbFqIB5

Don't use a regular sized can of corn, look for the really small ones. White corn is really good if you can find it. I like the cheese to brown a little too.

We slaughter and butcher our own pig - this will be our third year doing it. Raised at our friends farm, but the pork is way more tasty and rich than what you get at the store. We make our own bacon - smoked in the smoker with a maple syrup glaze - it's the best bacon ever. Enjoy your pulled pork recipe Harry! It sounds good, may have to try it with some of our own.

I lived in Tennessee for a while and had some great barbecue. In North Carolina they use a vinegar sauce. I like the kind without mustard.
