I like pickles and sauerkraut, but they're not spicy. ....but I saw this recipe, and I can eat this! The thought of the sweet and sour is making my mouth water....and it's freaking healthy as all get out. Check this out-- [link to www.youtube.com (secure)] --the only thing for me is getting one of those ingredients, the jujubes. I figure I can exchange standard chives my kids are growing like weeds right now for the buchu, Asian chives, and I've researched to find that dried apples will most be like the jujubes, if I can't find them here in town. It said regular dates can be used, too, but that it might alter the taste some. Have any of youse guyses made and/or eaten White Kimchi before? If you've made it, do you think my substitutions will be okay? Are their any other substitutions or additions you can tell me about? Happy day to you, and thank you!....
