op what are you using for oils/fats in the cooking/baking?
 Quoting: Anonymous Coward 51240139

The cobbler recipe called for butter, so I used butter (organic). I also have coconut oil and avocado oil. The avocado oil has completely replaced olive oil in my kitchen. I think the other recipe called for coconut oil....or maybe that was the chocolate coconut energy bites I made. Those were good. I'll be making those again.

I'm so new to this, though, so I have so little frame of reference.

I have tons of keto (gf) recipes and am subscribed to many low carb yt channels if you'd like some suggestions.

I really like Sonal. She's diabetic and keto. Cruise her channel for all types of foodstuffs.

Here's a good recipe to start off, the written recipe is also in the description:

some may benefit from Food for Life breads.. made of sprouted everything. Sprouting wheat changes the gluten.

[link to www.foodforlife.com (secure)] the recipe is actually in the bible...

your diet sounds healthy.

do you bloat?
 Quoting: Anonymous Coward 51240139

I can....but I suppose not so much since I've changed my diet. My belly was very distended with the ulcerative colitis. It still is a little, but I'm not bloating up when I eat now due to my diet change.

I also burp, a lot....and I get these like upside down hiccup things that happen deep in my stomach...heh, if even you're able to imagine that. It's just one at a time, maybe four or five times a day. It doesn't hurt or make me feel like I'm going to vomit, but it feels so weird.

I've had ten bowel obstructions in the last three years due to intussusception, this at my age apparently makes me an anomaly I've been told. My GI tract is an issue for me, along with inflammation. My mother tells me GI issues are a problem on her side of the family.

I've been tested up one side and down the other, CAT scans and MRIs and a Barium study - damned - blood tests, specific ones for autoimmune disease. Thankfully, I passed the Barium study.

The only thing left is the colonoscopy. Oh joy....charlie

Heh, I'm a little "once bitten, twice shy" about baking right now, but I'm willing to maybe give that a try sometime soon.

Have you made this recipe yourself, and it didn't have that funky meltie mouth feel?

No I have not made this one because I'm the only one with the health problems and something of this size seems wasteful at my house as I shouldn't eat it all regardless of how less hurtful it is. I do however make individuals such as mug cakes, "fatbomb" fudge, cheesecake ramekins with almond crust and whatnot.

I suggested Sonal because she's had this health issue life-long and she really seems to have a grasp on what actually comes across "normal" texture and taste-wise.

Re: Gluten-free baking: I NEED HALP! Lol....yikes!
I just bought a bag of Almond flour, that probably works well, but I also suggest using organic unbleached white flour and mixing the flours, use a little of the white flour to give it some body. Rice flour isn't healthy either, most carbs and grains are meant to be just a small percentage of your daily intake. Potato flour also makes delicious baked goods. Try mixing the flours

Most people are not gluten sensitive at all, it's hype. Several of the same Drs that are anti vax have nutritional videos about that subject.
