I'm really more of a pie woman, but I haven't even tried to make a crust gluten-free yet....I think I'm skerred it won't have any structure, either. I just made a blueberry cobbler using some Bisquick baking mix and almond flour, and added a little extra baking powder to it hoping it would bring some spring to the cake part....it's just got a nasty mouth feel. I found a recipe for chocolate chip cookies made with almond flour, the reviews were stellar, but I'm not sure if I want to waste my time now....and the more expensive ingredients. If youse guyses with experience baking gluten-free are going to say it's just something I'm going to have to get used to, I don't think I can. I hope I can get some guidance from youse guyses who have been eating gluten-free for awhile. Thank you!.... whole organic any flour but wheat... I use a whole bunch and I like to use 1/2 grain flour without gluten... and 1/2 nut flour... always yummy. I keep cashew flour and almond flour... as nut flours.. and most other no gluten whole grain flours. |

You can substitute with almond flour or coconut flower. I sometimes add some flax meal for further consistency. I have not bought them... but I have had people make stuff out of them and its as exciting as using corn starch for flour. being diabetic.. I like using 1/2 nut flours because it cuts the carbs...and oat flours and others that are gluten free. I use brown rice and barley flours too.. not sure in barley flour is gluten free though.. but its nice in banana bread. My problem is not gluten its the round up. Quinoa flour will make a pizza crust.. and chickpea flour will make the finest tortillas you will ever eat. |

If I just need to accept that my days of having cake and cobbler are over, then I can do that....but, lol, this is like torture for this old chef, thinking I'm going to score the ultimate recipe for gluten-free cake and cookies, if I just try hard enough. All I know is, eating gluten-free and lactose-free has made a significant difference in my gut, quite remarkably for the best....I battled with ulcerative colitis a couple of weeks ago, so I had to change my diet for a bit there. Once I felt the lack of discomfort after eating, I was fucking amazed. I will not be returning to eating anything with gluten in it any time soon.... I'm tellin' ya, it's like I'm 11 years old in my mom's kitchen, learning how to cook again.... it's a bit frustrating. I've won f'n cooking contests. The other thing I've noticed about eating gluten-free is that it has to be eaten right away, while hot. It seems it growing cold just drastically changes it. Such persnickety foods...or me..... What do I mean? Well you do know about Leaky Gut Syndrome or Crohn's disease? Those have to do with a weak digestive system. If you digestive system is damaged that means it is gonna have trouble to tolerate gluten. Makes sense right? I know logic. gee. So what you need are collagens to repair your damaged intestine. And here is where we run into the problem. Your probably a Vegan / Vegetarian who has not been eating the right amino acids to allow your body to repair itself. |

I also have coconut oil and avocado oil. The avocado oil has completely replaced olive oil in my kitchen. I think the other recipe called for coconut oil....or maybe that was the chocolate coconut energy bites I made. Those were good. I'll be making those again. I'm so new to this, though, so I have so little frame of reference. You never change things by fighting the existing reality. I've tried several of her recipes they're so easy and yeah haha chocolate brownies are one of my weaknesses. I never used to bake much but I'm getting more confident now lol I made a lemon and coconut loaf cake the other day and it's heavenly to say that I made it hehehe! My cakes usually sink ducks they're that bad! |

I have hydrolyzed multi collagen peptides, types I, II, III, V & X....heh, I put two heaping scoops of that in my energy bites. But I wasn't aware that collagen would help to heal my gut, so thank you for that info. I do believe it's already helped my back. My spinal doc told me my L2 and L3 had showed improvement at the last MRI. The collagen was the only thing I changed, so I think it helped. I had leaky gut and it was all yeast infection and nothing with gluten..cured it with yogurt and all that other fermented stuff. |
