For me, it's a critical ingredient for potato salad. Not just the flavor but the cool and crisp crunch. So let me start with, choose your favorite that holds its form and can be soft enough to enjoy. Ussually a good roasting potato. Now, lets get to the buisness. I boil say some idaho reds. till the skin is sort of saggy. or i can easly push a butter knife into it. I take them out of the water and rest them, they are so hot, they need to cool. I grab a big metal mix bowel and I dice up my cooked spuds. add them to the bowel and add a tub of sour cream and a jar of mayonase. I fine chop some shallots for color. a squeeze of lemon juice and mix. the hot to warm potato softens the mix. when it is all mixed well I place it into a tupperware container for the service. My Ranch potato salad is also a hit. I don't boil the potatoes, I dice then raw and coat them in olive oil. into a moderate oven at 200 celsius. for 40 minutes or till golden brown with darker corners. I dice up some bacon and fry it off in the frypan ( you can bake it half way when the spuds are in the oven) And the same as the other potato salad, it is just a nice country style for that lunch out in the yard. infact, you can roast a whole lot of different colored root vegetables, beets are very good in this. so you have a variety of color. with the mayo creamy mix, all I add to my color dish is a can of corn cernals. I serve this style when I do fish, for a mediterain kind of watch my family enjoy my love. Hubby Jaso gets home on saturday, he has been away at work for ten days, I am making this roast potato salad and some grilled flathead fish. for lunch when he gets back. then im going to drag him into the hay barn and root the shit out of him. You are so right about the type of potatoes. There are baking potatoes and roasting/boiling potatoes (red or gold, thin skin) which hold their firmness for potato salad. Do you eat it warm? I like my potato salad right after it is made and still warm. My kids don't like onions, so for years I just used potatoes, eggs, diced pickles (dill), dill pickle relish, mayo, mustard, salt. I also like to put vinegar in it at times, but kids don't like that, also like Jalapeno's or banana peppers occasionally. |

It us so popular here and some foreigners even call it the Russian salad. That's more like deviled eggs. We also have some celery haters. A few need hard boiled eggs. I won't because I'm doing vegan but a good compromise is to put sliced hard boiled eggs over the top for the egg lovers. I've just salted some cucumber slices to drain them and then I shall proceed. I will be using the following: Golden potatoes Sweet onion Celery Cucumbers Radishes Bell pepper (red because they were out of green) Mayo, dijon mustard, balsmaic vinegar and sugar (dressing is mildly sweet with a zing). I don't have any paprika on hand but that always gives a nice visual presentation when sprinkled on top.
