I told this story before:

My uncle Al, a boy of 17 from a ranch in New Mexico, had a job in Houston right after WWII.

He married my aunt Gloria a few weeks later. They were inseparable their entire lives.

So, where are the men and women who still remember how to slaughter and process an animal?

I have processed calves and young bulls here on my farm. Yeah, it's work, but you get a lot of organic meat and you know that it was handled properly.

JBS, the world’s largest beef supplier was hit with a ransomware attack on Sunday, threatening US meat supply.

Sunday’s cyberattack on JBS comes just weeks after ransomware hackers shut down the Colonial Pipeline, creating gas lines and shortages.

One-fifth of US beef production was wiped out after JBS paused processing at five of its biggest beef plants which manage a total of 22,500 cattle per day.
