It's alive and blossoms nicely. Knead til smooth and not sticky but bounces back to the touch. First proof 1.5 hours, doubles in size. Punch dough lightly before shaping and second proof. Uncovered second proof for 10 minutes Bake at 375 until internal temperature is 195. Why does one bun or loaf weigh as much as 2 should? It's decent flavor but so dense and heavy. I want fluffy and light.. Tips? you cannot make homemade bread fluffy and light... because you don't have commercial dough conditioners. I grew up on homemade and I do NOT like "fluffy " bread. Sounds like your bread came out PERFECT. |

And I did make a starter for one of these times. Just like a sticky homemade flour and sugar starter but I agree with you to an extent. Homemade stuff looks worse but tastes better. Don't proof your yeast. Forget Butter/Milk. Use Water / vegetable oil. Add Water Salt Sugar [yeast reacts to it] Vegetable Oil Flour on top Then make indentation in flour, place active dry yeast into indentation. Then mix together. The longer you allow the dough to rise the second time, the more airy the bread should be. |

I can no longer eat wheat... so I Use other real and decent flours and always organic non GMO and whole grain. I use a fair amount of nut flours.. good for my diabetes... usually half nut and half grain. I have long used spelt and have no problems with it.. and I like several other grain flours which taste better than wheat actually. |

Let it raise in a warm location with a bread cloth. Punch it down and knead it a bunch again. Put it into the baking pan, and put it in a warm location with a bread cloth again.
