Want the best in the world home cooked Ribeye??? Buy vac packed Choice ribeye loin. Put in frig. Leave in frig turning it top to bottom once a week. Do this 8 to 12 weeks. I know its hard to wait for it.... Now take it out of package. It might smell a bit sometimes NO PROBLEM. Wash it off a bit. Cut up and then package and freeze what you don't cook. Man I am not kidding you best steaks you will ever ever eat. I live in the middle of Nebraska. And we know this here. I will not make you sick so don't worry. Cook it on grill salt and pepper, cook rare or a bit more if you need it. Will melt in your mouth and so so much flavor. Aged loins will make your life so so much better. It has never made one of us sick. So don't fret.

LMAO its a bit darker but I am not kidding you. All the people are here do this. Not bad for you at all. I just had heard that a person had thrown away a steak because it was past the buy date on the package. People aged steaks are so good.

Your basically making dry aged steak but with a whole lot more bacteria that will make you sick.

Do yourself a favor and get some Umai bags if you do this again

The best steak is from your own steer that you corn fed for months before you butcher who knows what kind of stuff you get from a "supermarket ".but we do hang our deer until they get the white ring iridescent mold so you might be on to something.

I do love a nice fatty ribeye covered in garlic/salt/pepper.

I tend to fry mine and get it all caramelized.

Now I'm drooling.
