Not too much, except location. A lot of Creoles have intermarried with the original inhabitants of Southern Louisiana and some with former slaves, though. The French inhabitants of early New Orleans were different Frenchmen than the coastal fisherman of France who settled Acadia.

Of course, over the past two and half centuries, they've diverged from each other more in language, foods, music, etc. But the Cajuns were originally all "Acadians." The word "Cajun" is really just "acadian" said lazily and quickly...

i always was under the impression that they were in fact the same and that the cultural divergence over time that makes them appear to be different is the result of the passage on time and the selection of spouses who could have come from any number of places.

what's the difference between jambalaya and gumbo?
