Why are apps always wanting access to my camera roll?

many of your system apps have those permissions, you have to go to apps, select show system apps, go one by one and click on permissions and then find all permissions and select to see every permission that specific app has, why does my screen shot app need to watch me interact with that app? I can deny some permissions but other apps are allowed to reactivate them. why does my messaging app need to know my heart rate in order to function properly? I know on android if you go to files, storage, local, phone.. most likely several apps logging EVERYTHING!
