We ended up just making bowls to dip our Queso chips in. I made chicken, ho made refried beans white cheddar and sour cream. I forgot that taco sauce.

Para, this is my pumpkin pie recipe, I've been making this for years. It is SO good.

1 15oz canned pumpkin puree (not the pumpkin pie puree) or use 15 oz of your own cooked pumpkin

2 large eggs

1 14 oz can condensed milk

1/2 tsp salt

1 unbaked 9 inch frozen pie crust

I hate pumpkin spice and leave it out. But recipe calls for 1 tsp cinnamon, 1/2 tsp nutmeg, 1/2 tsp ground ginger OR add whatever amount you want of pumpkin pie spice.

preheat oven to 425 degrees.

Mix all ingredients and pour in pie shell

Bake @ 425 for 15 minutes, reduce heat to 350 degrees, bake until a knife inserted 1 inch from the crust comes out clean, 35-40 minutes.

Thanks I'll try it! I will put the spices in though. I'm going to compare the amounts to the recipe I used last year. It came out pretty bland.

The Libby calls for cloves instead of nutmeg. Maybe I'll like that better.

Early dinner tonight as we're eating at our daughter's house. She made chili over rice with cheese on
top. Baby doesn't like chili so she had cold rotisserie chicken. I have to have a bite of that, too.

They had cheddar biscuits but they were from the Red Lobster box and I couldn't have them. But the rice is plenty.

My daughter made a pie that is the bomb. It remindes me of creme brulee without the sugar scab as we call it.

She said it was a little runny when she took it out of the oven, but it thickened up nicely. She cooked till was thick but not boiling. It might have been tougher had she cooked it longer. It's like custard texture.


So I'll make 2 pumpkin pies and she'll make one of these. 3 pies should be plenty.

Chili rice & cheese was one of our staples as a child, but with a Fritos layer.

oooh, both look so yummy!! yesterday I had toast! But it was maple cinnamon bread toasted. I worked a really long day and was just too tired to make anything. And tonite my daughter made quick pasta...and I am grateful for supper!!
