Food with Attitude!

Just dawned on me, we don't even have basements here. Lol we head for a bathtub or if so else fails, a ditch hoping it's not already occupied...

yes, para. Made it and grilled chicken and had some sorta keto-off-shoot dining experience. Your hubby's looks more professional than mine. But the lime was fantastic. This was the last of the 365 ginger ale from when I had covid in May. I do not drink sodas. lmao.

I did a really bang up good job with a chunk of ahi tuna tonight. Made a lime-fig topping to a bbq'ish marinade, carrots with julienne ginger and made orzo pasta w two spoon fulls of chutney stirred in to give it a sweetness to compliment the tuna.

Oh good for you! Mr says he liked the lime on the corn, too.

Sorry to say my food allotment as of late has been sub par and I am losing weight.

Mom is on a diet. Dad eats at his leisure on his own schedule and the other two other adult men who live here as well, don't cook and often eat fast food from town or toss a pre made pizza in the oven.

So that leaves me.... basically fending for my own fare which consists of things like top ramen, salad,, cottage cheese, chicken or tuna sandwiches and the occasional fork full of Pepperoncini.

About once a week we all might share the same meal. With so much chaos in eating differential, I am not eating as often or as much or cooking anything of post worthy value.

I think I went down from a size 34, to a 32 waist...... Dad is losing weight also and he isn't a big guy either.

I got chicken marsala at the restaurant. It was good but holy cow, I think I got a whole box of pasta on that plate! I ate maybe 1/3, so Mr got a nice doggy bag.

We went to the park when I got home. There was a band there, but they were awful. First, they have a certain audience there. Jazz or classic rock is usually what's playing and possible get up and dance.

This band was playing songs we didn't even recognize. The ones we did were absolutely awful. I'm pretty sure their version of Beat It made my ears bleed.

They better watch out. We do have a dangerous gang here and they were in the audience.

That looks SO good! I love chicken marsala. It's one dish I don't mind mushrooms in. :)

I really need to try and make it at home. Prego used to make a mushroom marsala sauce in a jar. I really liked it. It was easy to brown chicken in a skillet, then add sauce, cover & simmer.

I don't think they make it anymore. I haven't seen it in forever. Don't it figure!

I just threw a whole chicken in the crock pot with some veggies. It was so tender even the bones fell apart.

I've actually made homemade chicken marsala. I think I had found the recipe on YT. Sauce and all was homemade. I was proud of myself with that one lol.

Mom's B-day party. Expecting company, family and friends. She is getting old.....don't ask me how old....I am not keeping track right now. She is in retirement age along with Dad and they are the same age. lol.

As a purist, I'd go for the real mccoy and get the regular wine - but I'm no chef and have never used marsala. Sweet or dry depends on taste, I suppose. Plan on it Para, and post the photos soon!

It may take me a few weeks, but I will! I need to psyche myself up properly.

I prefer sweet wines. Mr suggested I fry the mushrooms for the quiche with some wine. It added a nice little zing to it.

You can never go wrong with that. Add butter to the mushrooms too...yum.
