Italian seasoning, but vacumm pack it so it lasts (get herb seeds, and non hybrid seeds on Amazon), and then you can add it to soups and stews, or cook it up with veggies and/or meat. Rice cooked in bone broth, with some herbs/garlic/onions plus sliced mushrooms and a tablespoon of olive oil or butter is delicious on it's own. |

Certain beans need to be soaked in salt water overnight; even if you pressure cook them; it helps deactivate the enzymes that give you gas. PRESSURE COOKER. An electric one AND one for a heat stove or fire. Otherwise if the SHTF prepare to use 6 hrs of wood to cook those hard beans like pinto. |

I go with one cup beans to 2 cups water. Cook long enough and they will suck up most if not all the water. I am a humble Servant of the one True Living God. |

Cook short brown rice a little on the dry side so it’s chewy and not mushy. Just add a little less water when you’re cooking When it’s cooked Sprinkle on the top ground up sesame seeds and salt. Eat them separately don’t mush them all together. Beans are best if you soak them overnight, drain the water and add new water and then cook them slowly for several hours. Never add salt until they’re cooked almost all the way through. For most beans I always add in the beginning of cooking a large onion, several cloves of garlic and a couple bay leaves. Season after they are cooked with whatever you want or nothing because they’re good that way too! Splendid suggestions and recipe! Duly noted and will be trying this out! Really appreciate the specific directions - soak, change water, etc. Very kind of you to recognize a total newbie! How many cups of beans for one person? I usually cook a pound of beans, sometimes 2, eat some for a couple days and freeze the rest in baggies. You wouldn’t want to cook one serving when you’re cooking them for three hours or so. |

Tell us about it. Hey Pooka, I see you are getting ready for hard times. Beans and rice were my staples when I was really poor a few years ago. Wifey is from the Old Country, so we still eat a lot of beans and rice. When I was single I always cooked up beans in a big crockpot as follows. Inspect beans for pebbles and dirt clods. Those can ruin your meal and dental work. Rinse in a strainer to remove any field dirt. Soak overnight. One of the other posters recommended in salt water which is a great idea. Rinse until you don't see much foam. The foam is oligosaccharides, the sugars that the bacteria in the gut love to eat and turn into odorous products. You lose some flavor, but save on the intestinal upset. I added pork shoulder or whatever cheap pork was on sale. One pork butt or shoulder will make about 5 pots of beans. I froze the extra portions. Spices: I got creative and mixed a different batch each time. Used balsamic vinegar, rice vinegar, ancho powder, garlic, onions (gotta have those!), savory, cumin, thyme, basil, bay leaf, rosemary, curry, salt & pepper (of course), soy sauce, BBQ sauce, tomatoes. Open your spice cupboard and get creative. Oh yeah, if you add a lot of green spices that can create bitterness such as tarragon, I added black strap molasses to balance the flavors. I had to be careful with the habanero and jalapeno peppers, but they really add a kick. You could just cook the beans with pork, salt, and pepper, then experiment with different spice combos on small portions to find what you prefer. For rice, I always used chicken broth instead of water. Cheers! |

Tell us about it. im not sure how to get all te needed vitamins and minerals from your diet, i take sumliments multi vitamin and mineral pills. if you have a garden and could grow some food, fruits and vegetables may give you what you need i you check their nutrition in vitamins and minerals and combine different fruits and vegetables to get what you need. you could pickle in vinegar or put in brine (no experience of this salt water i believe) and store i glass jars, so you can still eat them out of season. ideally a big freezer would store them but that could become expensive. i am no expert but theres plenty of gardening and survival groups on the interet who would know more, including here. balsamic vinegar is expensive btw, even thoug its supposed to taste reat. apple cidre vinegar is supposed to be very good for you. |

Tell us about it. TL:DR Salsa with a good bit of cilantro and butter in the beans as they reach full hydration. Maybe it bears saying adding both onion and garlic is a must. Enjoy! One of my fave all time deals is rice, and beans with onion and garlic over cornbread with salsa and shredded cheese on top. But my kid says its a "Hippy Dinner". Anything without meat is dubbed as a Hippy Dinner in my carnivorous household.
