You add the butter. As it is cooking. If you look at the Traditional method of making curries, you will notice the inclusion of ghee in the dish. Ghee is clarified butter. The point of the butter is to provide a fat base that absorbs the flavours and clings to the dish. So just 'sprinkling spices' in is not as efficient as adding the spice with an emulsifying agent. Like butter, or pork lard, or beef tallow or something along those lines. Pretty much forever if you used quality meats to produce it in the first place. The quality of the meats is important, because today (in Canada at least) the various producers are allowed to 'add' a certain percentage of water to, let's say bacon. The bacon that has had water added to it makes a far inferior lard. So think of India and Ghee. Once they clarify (ie remove the water) the butter it lasts a heck of a lot longer because it is the water molecules inside the butter that harbour the bacteria. Ghee looks like a golden soup. It, unlike lard, does not go solid at room temperature (at least not here but where some of you are living it will). SO the Indians being too poor to afford to eat meat (it's is bullshit they are 'vegetarians', they are by poverty level not by choice), and not liking the idea of killing a cow, they milk them to make Ghee. It is the ghee that will saturate your dish with whatever flavour/savour you wish to add. Plus it gives you a healthy fat. Don't try this with the semi-plastic margarine. Useless poison. So knowing this, there is no end to what you can flavour your rice and beans with. Just for it's blase taste and health benefits you can always start off with a base of turmeric. It will colour it nicely just don't spill the powder on any sort of kitchen surface that is permeable. From there, personally, I would modify the rice-a-roni recipe sans the noodles. Even starving I wouldn't walk through the woods taking a bite out of everything, but when I was younger, food was withheld at times and I ate some truly disgusting stuff to live and was glad to have it. We must be very careful of such thinking. However, we acquire our beans and rice and other among the less desirable foods right from store shelves, and we know these foods to be for human consumption, so we'd better be prepared to eat what we have, what we have purchased for the purpose. Nobody dislikes anything more than I dislike beans, and I am going to eat them, by George! That's the reason for this thread - I am going to eat them!! You all have given such wonderful ideas on how to make them better, and those ideas can be alternated and mixed and matched so that each pot of beans will be different, and favorites will come to be. I'm grateful to each of you - except of course the grinches who said things like being hungry would solve the problem, or that I'd never worked hard a day in my life, and other idiocies. Thank you all and individually, and I ask that you don't stop here - keep it going, please, because I cannot be the only person with this aversion, and this thread can serve people as long as the internet and GLP lasts! Go for food truck not high end cuisine. It simply makes more sense. "I'm hungry" does not need to amount to...look at this neat thing. There is a trick. The 'trick' to cooking is to learn how to deal with what you have at hand. Fuck (pardon my French) recipes. You take what you have and make the best of it. You do not shop for a bunch of dinners. You shop for what is on discount. In other words you are not looking/shopping for a specific dinner, you are buying what's cheap. And then you learn how to cook. You might learn to appreciate a different cut of beef, or maybe an organ meat. The recipe comes in later once you have your ingredients. Stock your pantry with spices so you can simmer anything long enough and make it taste good. Or at least palatable. If you are looking at 'holy crap it has all gone to shit' cooking...it is not a bad idea to overstock your spices. I'm sure there are 'manly men' here who will claim just eat an MRE, and I have a years worth of Mountain House, enough for everyone in my family, I get it. But dealing with, sorry OP, women and children and complexity. You should, as a man, be able to bring home a bit of complexity to the meal. You all have your areas...here...we have crazy fungi. Dry, powder them, add them (at 16% protein) to every meal. Just fricking grab whatever you know is edible and dry it and add it to everything. If it doesn't taste good...mince it and add it to what does. I've done 27 ingredient salads with weeds....it was a competition for sure...but you mince the greens, toss them and make a dressing and then all of a sudden your salad is half a meal . ANd get yourselves some chickens.... So many people had focused their efforts on potatoes that that made plant disease or infestation to be more likely. Whereas if the had diversified, then they might have been okay. I way censored this to not be controversial. But a cruel aspect was called "taking the soup". Some missionaries would do a long presentation and only then would feed them a thin soup. Others were kind and fed them regardless. Obviously the latter is the correct Christian response. There is a very good movie about this called Black 47. |
