Wow, I hope they don't cause health problems. I use the large portobello mushroom caps to make small pizzas for my kids as a snack - they love them.

From tiny pieces that went down my kitchen sink when washing them, a huge one grew way way back in the pipe. Talk about a fkd up plumbing mess.

I saw a movie this guy made call know your mushrooms and he mentioned one called g Curtisi and said that people with a cold would walk by and take a sample and by the time they got halfway by down the sidewalk the come back and by more with their congestion gone. It is a good movie if you can find it

Here's one thing about them - because of the fins on them, they collect dirt and are hard to clean -- if you rinse them out it destroys the cohesion of the mushroom.

I have noticed dirty areas of the fins that have not gotten cleaned out at restaurants so I refuse to order them outside my home.

This guy is an absolute champion of certain mushrooms - to the point his organic supplements of certain fungi like Turkey Tail - etc. are top notch.

It also sounds like he is admitting that not ALL mushrooms have the same benefits and some are harmful - but then again - most people know that some mushrooms are not just harmful but deadly.

You have to look into this guy, he's something special - he really is.

Stamets talks about this in the GGMM too:

"Walton et al. 1998 asserted, however, that the mutagenic and premutagenic compounds are not affected by quick cooking (10 minutes at437f) but are only slightly reduced by prolonged heat treatment in boiling water for 4 hours at 212 f. A study of blanched canned mushrooms showed that the agaritine content was reduced tenfold in comparison to fresh mushrooms... However this reduction may have been due to the leaching of hydrazines into the surrounding water used for blanching, in combination with prolonged high pressure steaming process used for caning."

"Hashida et al 1990) Hashidas study reported marked reduction of agaritines from boiling water at 212 f for 10 minutes, a report in direct contradiction to Waltons 1998 study'"

In my opinion since this is the most popular mushroom sold commercially, bringing in big money for the producers, any ill effects are kept hidden as much as possible. I beleive that the contradicting results arrise from this "hiding" there is just too much at stake for the producers, if the general public were to become aware of the possible dangers. Especially the consumption of raw portabellos. They should really try and select a strain with extra low carcinogenic properties.

Those aren't Portobello. They are like the white ones. Portobello are the big giant ones that look like the top half of a hamburger bun.

When I was in high school, my biology teacher was so terrified of accidentally getting a poison mushroom that he would ONLY eat the ones from the can or bottle because they are grown under rigorously controlled conditions.
