I'm never eating Portabello mushrooms again!!!
The clip below is from November of last year so it's a little dated but I searched GLP and didn't see anything posted about this.

Paul Stamets is a mycologist, author and advocate of bioremediation and medicinal fungi. In other words he is an expert in the study of mushrooms. At around the 2 minute mark, Paul refuses to answer Joe Rogan's question on what the negative effects are of eating Portabello mushrooms. Paul states that his life is in danger if he answers the question!!! Wtf! Could it be that Portabello mushrooms cause cancer and the powers that be don't want us to know?

I've done a little bit of research on this and the only thing that I have found is that Portabello mushrooms contain Agaritine which is known to cause cancer and mutations in animals. Does anyone know more about this?

This reminds me of the goofy internet guy who claims all mushrooms are from outer space.

Are portobello mushrooms a trad food eaten for centuries?

Or are they new?

This would be my way of deciding whether to eat them.

Yeah, I also am a major lover of edible mushrooms and saw that last fall. From what I can ascertain, unless you cook portobellos there is a chemical in them that is rather like a chemical in jet fuel. Sorry that I can't recall what it is right now. But the knock down is to cook them.

Hope that gives someone a little peace. :)

Re: I'm never eating Portabello mushrooms again!!!
Quoted from the video above

Paul Stamets: Portabellas have a problem. All mushrooms should be cooked, and portabellas, in particular, should be cooked at high temperatures.

Joe Rogan: Why?

PS: There is an unfortunate group of compounds called agaritines. Agaritines, are hydrazines that are heat unstable, so the good news is, you should cook them, and if you cook them well, then those mushrooms are not a problem. If you don’t cook them well, then these hydrazines are potentially problematic. Now, nature’s a numbers game: so, there are beneficial compounds, that, in some balance, may outweigh the negative effects of the hydrazines, the garatines in these mushrooms, but that jury is still out so to speak.

JR: What are the negative effects of this?

PS: This is an explosive area of conversation, and that puts my life in danger, so I reserve the right not to answer your question.

JR: Woah! I didn’t expect that. It puts your life in danger talking about portabella mushrooms?

PS: [Silence]

How can hydrazines affect my health?
A small number of case studies of acute exposure in people suggest that your lungs, liver, kidney, and central nervous system may be injured if you breathe in hydrazine or 1,1-dimethylhydrazine or get them on your skin. Similar effects have been observed in animals. Animal studies indicate that effects on the liver usually consist of fatty changes, but other effects have also been noted. Some animals developed convulsions, tremors, seizures, or other effects on the nervous system after breathing hydrazines. Serious effects on the reproductive system were sometimes observed in animals. These effects included decreased sizes of the ovaries and testes and decreased sperm production.

It’s not just portobello, white button and crimini have the same compounds. All you have to do is cook them throughly, and it’s breaks down the toxin. None of those should be eaten raw.

Does this guy bring up the fact that studies have shown that mushroom assist in hemoglobin/red cell production, and removing of radiation metals, etc. etc. ....... Does he bring up this fact and tell us why it is no longer the case?

Or does he ignore it as if these studies don't exist?

Yes, in fact most of his talk was about the benefits of mushrooms - the actual podcast was over two hours long. The conversation only gets weird when the topic of Portabello's is brought up.

Paul does state that if cooked properly it should be OK - but why would his life be in danger!?

He runs fungiperfecti...Which I think is just fungi dot com. He knows a ton about mushrooms and is a phenomenal wealth of information about them.

I don't agree with him on everything he says, and I would say he is definitely eccentric, but he isn't someone to dismiss on everything just because he isn't 100% correct.

Thanks for that answer. I wonder how you improperly cook it? By letting it burn or overcook, does that change the chemistry? Strange that he is being so mysterious.... and not very helpful, good intentions or not.

Some chef experimented with cooking mushrooms and proved they can't be overcooked. So, just turn up the heat, cook longer than you would think is necessary, and that maybe will fix the problem? Idk, mushrooms are very tasty.

Sounds like it's time for that love of fungus steak to die off completely soon, Aurora. I find this news to be very intriguing simply because my mom loves those portabello mushrooms.

She eats a vastly superior diet than me yet much fatter than me. I've sometimes joked to her over the years that it's my junk food and GMO diet that keeps me "healthier" than her actual health foods. Looks like my portabella jokes are soon to die now. Fricken tragic, man!

If they are anything like the American Meat Institute, you're probably right.

Just cook them well.

I've been blessed enough to grow shiitake in homemade sawdust blocks, and my goodness, they are fantastic! I've tried several times to grow portobellos, and they never grow for me. But I will probably keep trying. Because they are indeed fantastic and make a great meat substitute.

My family calls them hippy dinners....No meat. lol.
