When you say you brought from a butcher a grocery store butcher or a butcher shop? Real beef taste completely different then grocery store beef. A meat shop will source from a grower who raise cows different then cows from commericialy. Beef farms Good grass fed beef not finished off on feed the last couple weeks will taste gamey sometimes. Beef raised in weeds instead of grass will taste really gamey I wonder if that's what your describing . |

Above just being absolute crap grade of meat and other by products, that squeeze tube full of pink goo is amalgamated between so many farms across the country that there is no hope of quality controlling it, tracking it to a specific producer for e-coli, etc, etc. I've cooked that before it is not like the type on the styrofoam tray wit the cellophane over it - It is gross I think it is "pink slime" |

This is a distinctive liver flavor, I could slather some onions on it and I don't mind eating it, just not what I expect when I make burgers. |

I have a hard time eating meat, mostly fish is all I can digest and ground meat. I want to eat meat but most of the time it makes my stomach hurt. Except for this liver flavored ground beef. |

I've eaten many hamburgers in my day. But what I am trying to get across is that along with that grinding comes the reality that in that one tube there are grindings from 1000 different farms across 40+ different states - so you are taking your chances. And that is just with normal hamburger. That pink play doughy crap in the tube you were referring to god knows what that is and where it comes from. I cooked that for some people at a BBQ and it didn't even resemble real meat to me. If I was to eat meat I'd go to the local quality butcher and procure it there, that is just my opinion. |

I am pretty sure that's what you're tasting when you say it's "like liver". IOW, probably fresher with a higher blood content than you are used to consuming. The iron taste probably means the meat was processed so fast that it was still full of blood. If you want good ground beef, forget the 96% lean. The fat gives it the flavor you are looking for. Cook the fat out, instead of paying the higher price for the "too lean" meat. 90% is usually cheaper and tastes better. Your best bet is to find a rancher than grows his own, and grains them for months instead of days. A steer that is finished on grain for 3 months will be so tender and flavorful you will have a hard time going back to store bought meat. A commercial beef cow goes through a feed lot in a week or less. The good cuts should have yellow marbling, but you rarely see that in a supermarket. Hope for the best, but prepare for the worst. Our grass fed is not gritty by any means and I enjoy its flavor. It is lower fat. I also enjoy that it lacks a pharmacy based preparation. From a local family growing a couple a year. One problem with an extremely low fat (96% lean) burger is that it will not hold together as a hamburger. If yours is it is not 96% lean. Or it has a strange additive. |
