Food Question: Ground Beef
I don't normally buy the Ground Beef that comes in the pre-packaged weighed tubes, where you can't actually see the meat.

I usually buy the meat in the plastic plate wrapped with cellophane.

But, they had groundchuck at 1.99 /lbs in the tube, so I grabbed a tube of it.

Anyways...I made a couple of hamburgers, but what I noticed is that you can reshape and reform these burgers but when you start cooking them, they revert to the size/shape of the tube. No matter how you manipulate it, the meat has a memory of it's shape.

What causes this? I've bought breakfast sausage in tubes, but never noticed this behavior in that meat.

it was 3lbs of Ground Chuck for 5.97.

I couldn't say 'no'. I just am wondering what they do to the meat to get it to have a molecular memory. it's freakin' me out.

Re: Food Question: Ground Beef
Meat consumption is a necessary for healthy humans. 30% of your diet should be beef/chicken/turkey/bison/etc to get all the amino acids and nutrients you need. As for meat in a tube, just mix it up good and there won't be any shape. Unless you bought old stuff. I've never had any issues but I also buy the grass fed beef/bison.

That's why you buy from local farmers at a fair price and know you get the meat you paid for.

Every Guy knows that meat has memory with some oil and warmed properly.

It swells and returns to its proper tube shape.

Re: Food Question: Ground Beef
if youre just slicing the tube and flattening...

of course meat shrinks when cooking and proteins bind.

so maybe it looks like what youre describing but please dont have the intellect of a kindergartner.

For a few cents/lb more ($2.18/lb here), the butcher ground the fresh chuck roasts I selected into ground beef. I NEVER buy pre-packaged slime crap.

Re: Food Question: Ground Beef
The tube stuff from Kroger ( the highest fat content) is the most tasty on the grill. Need to make your burger about 2x the finished size you want as it srinks to nothing.

I don't eat the crap often but when I want a burger, I want a big, juicy, tasty burger.
I tell you the Kroger tube stuff makes a better burger than my local butcher $$$ expensive stuff.

Cant stand the other brand grocery store beef at all, only the cheep Kroger stuff!

Whether it's dumped into a feeding trough or the ocean, you're still getting your allocation of toxic bullshit. Seafood would be a (marginally) better choice than bro beef, but you're better off raising the fish yourself. Otherwise, do some digging on farmed fish controversies.

Re: Food Question: Ground Beef
ONly thing I buy in a tube is the Jimmy dean sausage. I have never tried the beef in the tube. I go to the local IGA and buy a 10 pound bag of it. They have their own slaughter house and use local grown cows. I like it so much better. However we don't eat beef much, usually we eat chicken.
