Use mild or hot peppers and onion if you wish, takes about 15min make. It never goes to waste in my house!! |

The Beef is really good for Beef and Barley Soup. Sometimes I make the same soup with Orzo Pasta instead of Barley and they are both good. Its a beef broth soup with diced up beef and I saute Onion, Celery, Carrot, Garlic and Mushrooms. deglaze with a bit of red wine and add your beef stock. I like to simmer for awhile and add some peas and green onion at this stage, I also add pepper and a few herbs like Rosemary, Thyme, small amount of basil and Season with Salt to taste. |

This is a quick one my husband and I have always been fond of and it's so easy, it's 'idiot proof.' And it has pork! Get a pack of that 'country style' pork; it can be with or without bones, whatever looks good. Use a large pot, like you cook beans in. Put the pork in the pot with a little bit of water and a lot of chopped garlic. (you can add onion only if you are not going to be sharing this dish with your dog or cat.) Meanwhile, peel and cut some potatoes in chunks, so they'll cook fast. Bring that little bit of water around the pork to a boil, then clamp the lid on and braise on a simmer for about a half hour, till the meat is about tender. (that cut of pork will be tender. if you try it with too lean a meat, it will not be so soon) Add potatoes and simmer till they are tender too. Meanwhile, if you're smart enough to buy this in seed form, grind some fresh comino. (cumin) You can use ground, if you have a fresh tin but the fresh ground has a sweetness you will never get from the ready-ground. Add that to the pot - about a teaspoon (for 1 2-3lb pack pork) Keep it simmering while you're doing all this. Then and only then, open a big can (size 10? 24 oz.) of that Las Palmas Green Enchilada Sauce and stir it in. When it's completely hot, just before you serve it, cut up some cubes of Monterray Jack cheese to melt on the surface. You can always make it hotter, as in picante, but it'll be more predictable if you do it this way first and add your extra fire later. Plain buttered bread or flour tortillas (homemade - use that Quaker flour tortilla mix) go great with it. |

I leave them in. slice the carrots, celery and onion let it boil and then simmer for a few hours. Cook the chicken thighs right in there until they jsut kinda fall apart. Your taste buds with thank you. |

Add half ground beast and half sausage. Add whole red pepper diced SMALL. Add a shit load of garlic Here is the KEY --as the veggies, groundbeast and sausage are cooking. turn the heat up and char the shit out of the contents of the pot. You will begin to see it form on the sides of the pot/pan. Add a pack of chili seasoning, more chili pecker and cummin, salt pecker. Just when you think youre burning the sheeit out of everything add a can or two of diced tomatoes (depending upon how much chili your making). The acidity of the tomatoes will immediately begin to clean the char from the side and bottom of said pot. Go with it..keep heat high. Now add black beans and kidney or whatever the hell you like. Depending on the thickness after you add your beans add a wee bit of water (not too much). Now the key...squirt a few tablespoons of ketchup/catsup. GO LOSE YOUR BRAINS... |

Rough cut potato's to bite size, lightly brown with bacon bits (three strips), 2-3 stalks chopped up celery, and 1/2 diced med onion. I put in course black pepper, a few cloves of minced garlic, a pinch of rosemary and fennel seed. Add a few cups of chicken broth and water to cover. When the potato's are tender add salt. I make a roux with butter, flour, salt, and milk (or heavy cream) to thicken and whisk in slowly. Before its all done, I take a potato masher and mash some of the bigger pieces. Variations: ham, kielbasa, sweet potato, fresh carrot, fresh broccoli, whole kernel corn, parsley or cilantro. I dont like a "busy" soup so I use one or two. *Edit to add yellow squash or zucchini.
