I assume you are using/referencing the uncanonized texts.......I suspect they were left out because they fill in the gaps so to speak.
I would agree that that is how dinosaurs came to be. But of course many individuals will scoff at that explanation as well. They don’t want the question “ well why aren't dinosaurs mentioned in the bible” to be answered.

The Book of Jubilees, Giants, Jasher, the Book of Noah, Enoch, etc. There's probably even more references to these transgenic experiments in the likes of the Mahabarata and other ancent texts.
