Peter wrote, Paul wrote, some had other to write things down for them. There is plenty of evidence who wrote the books. Part of the letters from Peter were found but some of it was burned. It was in his own hand written by him. It was found in a where a monk was burning the scrolls as firewood in Jerusalem. That is what happen to some of the earliest writing in Jerusalem climate change, it was cold so he burn them to stay warm. The Apostles had helpers, these are the how some of it was written, but most of the Jews were taught to read and write, being a fishermen did not make you poor. Peter was a tax collector if I am not mistaken. Paul was a Jewish zealot for the temple, he believed God strongly until shown different, then he was a zealot for Jesus Christ, the Messiah.
