If someone wants to eat vegan, there are some really stupendous Middle East and Lebanese recipes out there. The best investment I ever made was a vegetarian Lebanese cookbook -- I love lentil and chard soup or red lentil potatoes soup, hummus...falafels, salads...that lovely lemony saltiness -- so many nice salads, too. Delicious.
