I made stuffed peppers yesterday and I'm chop meated out Hey, thanks ! Good idea, Ive had dried beans for years and didnt know how to cook them, Nows my chance to try. You don't have to soak them...add dry beans and water to crock pot and slow cook on low for 8-10 hours...I put it in about 7:00 AM and we eat around 6:00 PM...couple of bay leaves, chopped onion, pepper, garlic, ham flavoring...yum! I never forgive and I never forget I am a licensed firearm holder. I will, under protection of law, use lethal force if attacked. |

Brief's suggestion of the crock pot is probably the best idea. If I ever get one of those (no room for it) cooking dried beans will be the main/only use for it. Drain off the water you soaked them in and rinse them before you add fresh water to cook them in. It can take several many hours to cook them at a nice slow simmer before they are done, depends on how old the beans are I think? |

Remove lid and boil it until you reach desired consistancy, it's supposed to be on the thicker side. Got more than I bargained for. :) Added a canned ham, broke it small pieces, and cooked slowly for about 3 hours. Mmmm, mmmm, good! Turned out like my mama used to make. A lot of it will go in the freezer for several meals. I'm learning the tricks to making fluffy biscuits. That will save on the price of bread. With QE 3, we're going to have to cut back on expenses, without sparing nutrition, by preparing basic foods that taste good. . |

Here's the corn bread recipe that I use 1/4 Cup butter flavor Crisco (for skillet) 1/4 Cup butter flavor Crisco (for cornbread mix) 2 Cups buttermilk 1 Egg 1 Cup flour 1 Cup corn meal 1 Tsp salt 3 Tsp baking powder Put the 1/4 cup of Crisco in a 10" cast iron skillet and place it in the oven, turn the oven to 450'. By the time the oven gets to 450 the skillet and Crisco will be good and hot. Melt the other 1/4 cup of crisco in a bowl in the microwave and mix in first the buttermilk, beating with a fork or whisking constantly. Then add the egg and mix thoroughly. Mix well the dry ingredients in a medium bowl; add the liquid mixture just before pouring into the hot skillet, stirring only until combined. (Don't overmix!.) Pour this mix into the very hot skillet and put it back into the oven for 20-25 minutes at 450' Serve with butter. Ummmmmmmmmmmm Good! |
