The other guy might not even have known about him.

Sure it's one thing to attack a man who you know definitely knows of your existence but attacking another man who thought he was innocently getting his rocks off is quite another, particularly when he's just been surprised while getting his rocks. That's double embarrassment, stabbing him would be too much.
