There are many recipes, most of which have in common the following ingredients: sheep's 'pluck' (heart, liver and lungs), minced with onion, oatmeal, suet, spices, and salt, mixed with stock, and traditionally boiled in the animal's stomach for approximately three hours. Haggis somewhat resembles stuffed intestines (pig intestines otherwise known as chitterlings or the kokoretsi of traditional Balkan cuisine), sausages and savoury puddings of which it is among the largest types. As the 2001 English edition of the Larousse Gastronomique puts it, "Although its description is not immediately appealing, haggis has an excellent nutty texture and delicious savoury flavour."[1] Most modern commercial haggis is prepared in a casing rather than an actual stomach. There are also meat-free recipes for vegetarians. Haggis is traditionally served with "neeps and tatties" (Scots: swede, yellow turnip or rutabaga and potatoes, boiled and mashed separately) and a "dram" (i.e. a glass of Scotch whisky), especially as the main course of a Burns supper. However it is also often eaten with other accompaniments, or served with a Whisky-based sauce. And here's pudding: Ok, you're gonna need some string, an extremely big cloth, big pot (with a lid) and big mixing bowl for this; additionally, you'll put a dinner plate in the bottom of your huge pot to prevent any burning/sticking of the base of the dumpling. This cloth should be about/at least 2 feet square Quoting: CelticLegendsWe didn't have a big enough cloth so we reverse engineered a brand new pillowcase.. lol This is my Gran/Grandad's Clootie Dumpling recipe (clootie means cloth- it's basically a huge steam pudding), but it's probably similar all over Scotland: 3lb of self-raising flour 1 tablespoon of baking powder 3 handfulls of sugar (this really is an old fashioned recipe, lol) 2 small drums of dried, mixed spice (1 drum can do) 1lb. of raisins 1lb. of currants (throw some sultanas in too if you like) 1 carrot, finely grated 3 tablespoons of DARK treacle 2 pints of milk Mix the ingredients as you add them, just don't add the milk all at once. Also you may not use all the milk When you've mixed all the ingredients in fully, spread out the cloth you've chosen on a flat surface, and sprinkle fairly heavily with some flour; this prevents the dumpling sticking too much to the cloth Scoop/spoon all of the mixture into the cloth and carefully gather the corners of the cloth to create a makeshift sack Smack the sack as if it's a newborn baby (LOL, no I've never actually done this to a newborn baby), then use the piece of string to tie a secure knot around the 'neck' of the sack, then lower the whole thing into your already boiling, huge pot **You don't need to fill the pot with water; around a quarter of the way 'up' the dumpling is fine, AFTER the dumpling is in the pot Boil/steam for 2 hours (3 hours ifd you double the mixture) Remove from pot; sit dumpling on another plate, then untie the knot at the top. Place another plate on top of the clootie dumpling and flip it over then remove completely, the cloth. **You may need help with this, depending on the size of your dumpling Place the plate in an already-warm oven for 10 minutes to dry slightly Slice, have with brandy butter, cream or custard and enjoy It is the Thunderbolt that steers the Universe - Heraclitus |
