I'm the queen of cooking huge meals just so I can store the leftovers in vaccuum seal bags. I store them in single portions and in the morning before I walk out the door for work, I grab one....whichever I feel like having that day.

This sux; I don´t see no beer!

I seriously don't know where I'd be right now without it!

Have you ever thought of making long term storage items (not quite what Spud had in his OP) for WTSHTF?

That's what the pressure cooker/canning is for. Vaccuum sealing makes food last longer, but nowhere near the amount of time canning does.

Yes canning is next for me. I have emergency food/water and the vacuum sealer, so canning is next to be purchased. I hope to master that quickly so I "CAN" get to it!

I'm being serious....I have bought pressure cookers, the big pot thingies to boil bottles, and bottles, lids etc.

I just have never canned anything before....but it's a great thing to learn...one of these years.

ETA: And I'm still scared to death of that pressure cooker. I am constantly flinching thinking it's going to explode.

I'm going to find someone who knows what they are doing when it comes to the pressure cooker....I'll watch and learn...hate to get blowed up...not that I haven't been there before.

Canning is not that complex. Easily self taught by following the instructions in any one of scads of sources. Just do a batch. Nothin' to it.

There are several BIG fruit trees I know of...every year the apples and pears just rot...they are pretty fruits, too. I wonder what a good thing to do with them would be?
Boil them down with sugar and make a jam kinda thing...or what?

i am going to get a vacuum sealer, some bags, and get started putting some chicken and fish in my closet.

Well I never have had a blown lid or a broken jar...I only meant that it scares me because of the sound...and knowing that it is a "pressure" cooker, is all.

I've been canning my whole life ( grew up helping old farm women)...it isn't that difficult.
For fruit, you don't need the Pressure canner, a hot water bath canner is fine.
Tomatos are the same way...
Fruit and maters have enough acid on their own to destroy any pathogens.
You only have to use the Pressure canner for low acid foods, like green beans, corn, meat, taters...

I love to can apples ready to "fry". I don't know if you are a fried apple lover, but it sure is nice to just have to dump a jar in the skillet and add a lil butter and sugar.
The spices are already in with the canned apples.
I also used to make homemade pie fillings out of the fruit.
A Hell of a lot cheaper than buying it, and it tastes better too.
Be sure to use " Clear Gel -A", for the pie filling, it dosen't break down in storage like the other thickeners, like flour, or tapioca.

That really isn't such a bad idea, esp. if you would be having to cross water...I'd put some bullets and matches in there too though... ;)
