I've been canning my whole life ( grew up helping old farm women)...it isn't that difficult. For fruit, you don't need the Pressure canner, a hot water bath canner is fine. Tomatos are the same way... Fruit and maters have enough acid on their own to destroy any pathogens. You only have to use the Pressure canner for low acid foods, like green beans, corn, meat, taters... I love to can apples ready to "fry". I don't know if you are a fried apple lover, but it sure is nice to just have to dump a jar in the skillet and add a lil butter and sugar. The spices are already in with the canned apples. I also used to make homemade pie fillings out of the fruit. A Hell of a lot cheaper than buying it, and it tastes better too. Be sure to use " Clear Gel -A", for the pie filling, it dosen't break down in storage like the other thickeners, like flour, or tapioca. I wish you luck with your canning...:) ...and thanks for the laugh this morning! LOL..I truly laughed out loud when I saw the pics of what you've been storing in your vaccuume sealer...esp. the pistol..;) That really isn't such a bad idea, esp. if you would be having to cross water...I'd put some bullets and matches in there too though... ;) |
